The proper aparthotels
Cityden City Centre has 89 studios and one-bedrooms on Nieuwezijds Voorburgwal with induction hobs, microwaves, dishwashers and Nespresso machines. From €220 for a studio, and the location is central without being tourist-strip. Yays Bickersgracht has canal-side apartments in a quiet corner of Amsterdam-West, full kitchens including ovens, from €260. Zoku Amsterdam near Weesperplein does 'loft' rooms with a real kitchen, dining table and staircase in about 25 square metres — clever design, from €195.
The Bank Hotel by Cityden and Eric Vökel Amsterdam Suites both offer full-kitchen apartments in the €230-320 range. All of these are more expensive than standard hotel rooms but you save the €60 breakfast and can do proper dinners with Albert Heijn ingredients from downstairs.
Kitchenette-lite and outside the city
Some hotels offer 'kitchenette rooms' that are really a mini-fridge, kettle and microwave — useful for breakfast, not for cooking. Sweets Hotel Amsterdam (rooms in converted bridge-keeper houses) has a few units with proper kitchens; a novelty stay with kitchen access from €225. Outside Amsterdam, Landal parks on Texel and near the coast are effectively self-catering — much cheaper per square metre.
In Zaandam, Inntel Hotels Amsterdam Zaandam has some suites with kitchenettes and a great view of the Zaanse Schans area. Skip anything advertising 'kitchenette' without specifying a hob or induction plate — a microwave alone doesn’t count for real cooking, and you’ll be back to takeaway by night two.

Where do I buy groceries in central Amsterdam?
Albert Heijn stores are everywhere — the branches on Nieuwmarkt, Koningsplein and Jodenbreestraat are open until 22:00. For better produce, Marqt or Ekoplaza.
Are aparthotels cheaper for a week than a hotel?
Roughly break-even on the room, but you save €40-70 per day on food if you cook two meals in. For families of three or more, aparthotels are almost always the better value.
