Waldorf Astoria Amsterdam is the splurge — six palaces on Herengracht, a walled garden, and canal-view rooms starting near €700. Two honest mid-range picks: Hotel IX on Nieuwezijds Voorburgwal (a filled-in canal, technically) and Mr. Jordaan on Bloemgracht, where corner rooms 301 and 401 give you the Jordaan canal-crossing view for under €280. Skip anything advertising 'canal district views' without naming the canal — that phrasing usually means you’ll see a rooftop.
