The Michelin tier
Hotel De Nederlanden in Vreeland (technically Utrecht border but 20 minutes from Amsterdam) holds a Michelin star at De Nederlanden restaurant with tasting menus around €140. Waldorf Astoria Amsterdam has Spectrum, one star, chef Sidney Schutte's tasting menu at €225 — this is serious food, not hotel food. The Dylan's Vinkeles holds two stars in an 18th-century bakery on Keizersgracht; €195 for the seven-course, and you should book six weeks out.
None of these are cheap, but all three are places locals book for anniversaries — not tourist traps attached to lobbies. A meaningful test: if the restaurant has a separate street entrance and its own regulars, it's real. All three do.
Excellent without the stars
Hotel De Goudfazant is not a hotel but Hotel Jakarta Amsterdam on Java-eiland has a rooftop restaurant with genuinely good Indonesian-influenced cooking and eastern harbour views. Conservatorium Hotel's Taiko does high-end Japanese; portions are small, prices are Amsterdam-South, but the sushi is technically excellent. In Haarlem, Hotel ML has ML Restaurant with a lost Michelin star but the same chef and mains around €38.
For value: Ambassade Hotel's brasserie is quietly excellent for Dutch classics like tongue with mustard sauce (€28). In Bergen, Parkhotel Bergen's restaurant does honest French-Dutch cooking for around €55 for three courses. Skip the restaurants at chain hotels near Schiphol — Marriott, Hilton, Sheraton — where the food is fine but never memorable.
